Ingredients

  • 6 chilli pepper (s), green long Thai, chopped
  • 6 cloves garlic, chopped
  • 50 ml oil, peanut
  • 350 g chicken breast
  • 2 chilli pepper (s), red long Thai, pitted and quartered lengthways
  • 2 tablespoon oyster sauce, approx
  • 1 teaspoon fish sauce, approx.
  • 1 teaspoon soy sauce, dark, approx.
  • 3 stems basil, holy Thai / spicy basil (Bai Kraphao)
  • salt

Instructions

  1. Prepare and chop the chicken breast.
  2. Put the green chillies and garlic in the mortar with a pinch of salt and crush / puree.
  3. Heat the oil in a wok or a high pan. Add the chilli-garlic paste and stir-fry for approx. 1 min. Add the meat and fry for another 1 minute.
  4. Add the red chillies, oyster, fish and soy sauce, stir-fry for 2 minutes. Mix in the basil, cut into pieces and cut coarse leaf stalks, and serve immediately with fragrant rice.
