Ingredients

  • 4 scoops mozzarella (preferably buffalo mozzarella)
  • 8 slices Parma ham
  • pepper
  • 16 leaves sage, small
  • 2 tablespoon mustard (fig mustard)
  • 2 tablespoon balsamic vinegar
  • 3 tablespoon olive oil
  • 0.5 ½ bunch rocket
  • 1 tablespoon butter

Instructions

  1. Pat the mozzarella dry and cut in half horizontally. Sprinkle each slice of ham with pepper and cover with a sage leaf. Wrap one half of the mozzarella in each.
  2. Mix the mustard, vinegar, 1 tablespoon water and 1 tablespoon oil. Season with a little pepper. Wash, clean and drain the rocket. Mix everything.
  3. Heat 2 tablespoons of oil and butter. Fry the mozzarella parcels with the seam side down for about 2 minutes. Then turn and fry for another 2 minutes. Drain on kitchen paper. Briefly toss the rest of the sage in the frying fat. Arrange the mozzarella parcels with sage and rocket. Baguette goes well with it.
