Ingredients

  • 2 zucchini, firm
  • 1 clove garlic
  • 1 teaspoon thyme, fresh
  • 5 tablespoon olive oil
  • salt and pepper

Instructions

  1. Clean the zucchini and quarter lengthways. Cut the quarters diagonally into diamonds.
  2. Mix these with olive oil, thyme (coarsely broken open) and garlic and fry in a pan until they have formed roasted aromas, i.e. are lightly browned. Now season with salt and pepper and serve warm as a side dish or in a variation with aubergine and paprika as a starter.
  3. Fried zucchini is just as tasty when marinated overnight and served cold.
