Ingredients

  • 150 g rocket
  • 200 g mozzarella
  • 1 medium avocado (s)
  • 1 medium mango (s)
  • 8 small cocktail tomatoes
  • 1 large red pepper (s)
  • 15 g pine nuts, roasted or other round kernels
  • 2 tablespoon white wine vinegar
  • 2 tablespoon honey
  • 5 tablespoon olive oil, or walnut oil
  • 5 tablespoon water
  • Salt and pepper, from the mill

Instructions

  1. Wash the rocket and cut it a little smaller. It is best to distribute it on a large, flat plate. Then wash, clean and bite-size all other ingredients and spread on the rocket. Mix white wine vinegar, honey, oil, water, pepper and salt, season to taste and spread over the top.
