Ingredients

  • 300 g carrot (s)
  • 2 tablespoon butter
  • 1 tablespoon olive oil
  • 1 piece (s) ginger, 2-3 cm
  • 1 tablespoon honey, more liquid
  • 1 half lime (s)
  • some coriander, ground
  • 50 ml vegetable stock
  • 50 ml apple juice

Instructions

  1. Peel, wash and slice the carrots. Melt the butter in a pan and add the olive oil. Put the carrots in the pan. Finely grate the ginger and add honey, lime juice and a pinch of coriander to the carrots. Stir for 2 minutes, then deglaze with the hot stock. Let it steep on a low flame. Always pour in a little apple juice until the carrots have the desired consistency. Very tasty with fried or steamed fish or vegetarian patties.
