- 250 g rocket
- 6 tomato (s)
- 2 onions)
- 8 tablespoon olive oil
- 4 tablespoon balsamic vinegar
- Thyme, fresher
- Herbal salt, freshly ground pepper
- 2 cloves garlic

- Chop the onions into small pieces.
- Heat the olive oil in a pan, add the onion pieces and the pressed garlic cloves and roast them until brown.
- Put the goat`s cheese talers (the unpicked ones, are available at well-stocked cheese counters, is fresh goat`s cheese) in the pan and fry briefly on both sides over high heat (be careful, it gets soft, has to go quickly).
- Add pepper, salt and a few finely chopped twigs with fresh thyme just before the end. At the very end, drizzle the balsamic vinegar over it.
- Wash the rocket and cut into bite-sized pieces. Omit hard stems. Spread the rocket out on a serving platter. Cut the tomatoes into slices and spread them on the rocket. Top with the fried goat cheese thalers.
- Pour the oil vinaigrette over the whole pan and serve while it is still warm.
- It is served with baguette, ciabatta, pide or French country white bread.
