Ingredients
- 1 kg roast pork (roast salmon)
- 1 small onion (s)
- 1 ½ liter vegetable stock
- 2 tablespoon tomato paste
- 3 tablespoon mustard, medium hot
- 2 carrot (s)
- 1 small Can (s) mushrooms
- salt
- pepper
- herbs
- Sauce thickener
- 1 tablespoon crème fraîche
- sunflower oil

- First cut the onion into small cubes, then remove the coarse fat from the pork salmon and also cut into small cubes. Fry everything together in a pan or a non-stick saucepan with hot oil until the meat is lightly colored. Season to taste.
- In the meantime, peel the carrots and cut into fine pieces. Then deglaze the meat with vegetable stock. Add the tomato paste, mustard, carrots and the small can of mushrooms. You can also use fresh mushrooms, which must then also be fried. Now stir in the sauce thickener as needed until the desired consistency is achieved and cook well so that the meat is tender. Just before serving, add a tablespoon of crème fraîche and season to taste. I also like to add some fresh parsley.
- Boiled potatoes, rice, spaetzle or croquettes go well with this.
