Ingredients

  • 500 g beans, reen, cleaned, halved
  • 250 g potato (s), waxy, small
  • 80 ml extra virgin olive oil
  • 3 tablespoon vinegar, (red wine vinegar)
  • 3 cloves garlic, chopped
  • 1 tablespoon oregano, dried
  • 1 tablespoon parsley, freshly chopped
  • 1 pinch (s) chilli, red
  • salt and pepper

Instructions

  1. Cook the beans in 2 liters of boiling salted water for 8 to 10 minutes until they are crisp and soft. Drain well and set aside.
  2. Boil the potatoes until soft and peel them off, let them cool and cut into cubes. Add to the beans.
  3. Add all other ingredients to the vegetables and mix them together carefully using a large spoon.
  4. Can be served both warm and chilled.
