Ingredients

  • 16 scallop (s), fresh, cleaned
  • 8 slices bacon
  • 16 bell pepper (s), Pimientos de Patron (small, green, careful, some are very hot)
  • some sea salt, coarse
  • some pepper, freshly ground, black
  • some lime juice

Instructions

  1. Halve the bacon slices, lightly pepper the scallops, drizzle with a little lime juice and wrap with the bacon. Alternate the oiled grill skewers with the wrapped scallops and the Pimientos de Patron. Grill over direct heat on the grill for about 3 minutes. Sprinkle the pimientos with a little coarse salt and serve immediately.
