Ingredients

  • 180 g flour
  • 90 g butter, cold, cut into small pieces
  • 90 g quark, 40%, drained well
  • 2 tablespoon mustard (Dijon mustard)
  • 1 teaspoon honey
  • 100 g fresh oat cheese or stron older oat cheese, to taste
  • 0.5 ½ lemon (s), grated zest
  • 0.5 ½ bunch parsley, chopped
  • 2 zucchini, small, sliced
  • 2 tablespoon olive oil
  • 1 small clove (s) garlic, diced
  • salt and pepper
  • some olive oil for brushing

Instructions

  1. Prepare a quick, light puff pastry from flour, butter, quark and a strong pinch of salt.
  2. Puree the mustard, honey, goat cheese, lemon zest and parsley into a paste. It should be spreadable, but not too thin. If dry goat cheese is used, add a little olive oil or milk if necessary.
  3. Fry the zucchini with the garlic in oil, but you shouldn`t let them get any color. If very mild goat cheese is used, add a little salt, otherwise freshly ground pepper is sufficient as a spice.
  4. Roll out the puff pastry and place in a 26 or 28 tart pan, pierce several times. Spread the goat box mustard paste on top, cover with the zucchini slices and drizzle with a little olive oil.
  5. Bake at 170 ° C for about 25 minutes, the zucchini should get a crispy surface.
  6. A tart is enough for our appetite together with a salad and a small dessert for a dinner for 4 people.
  7. Variation: instead of parsley, prepare the mustard paste with wild garlic, but then do not add a clove of garlic to the zucchini.
