Ingredients
- 500 g pasta, sort as you like
- 1 small onion (s)
- 1 small bunch parsley
- 1 small bunch chives
- 1 clove garlic
- 2 tablespoon crème fraîche, or sour cream
- 3 egg (s)
- 200 g cooked ham
- 2 handfuls cheese, grated, variety your choice
- salt and pepper
- 2 tablespoon margarine

- Cook the pasta according to the instructions on the packet. You can also use leftovers from the day before.
- Chop the herbs. Dice the onion. Peel the garlic clove and press it through the garlic press. Cut the ham into small cubes.
- Heat the margarine in the pan and add the ham, fry for 2-3 minutes and stir again and again with a spatula. Now add the mixed herbs, garlic and onions and cook with them. As soon as everything has turned a nice color and the ham is slightly crispy, add the pasta and fry with it. Mix in a little crème fraîche or sour cream. Beat the eggs and pour over the pasta. Fry them, stirring, until they are thickened. Finally, season with salt and pepper.
- Arrange on a plate and sprinkle with grated cheese.
- A mixed salad with light yoghurt or balsamic dressing goes well with it.
- My grandma brought the dish to the table as leftover food when I was little. I think the combination of herbs with onions and garlic makes the dish particularly tasty.
