Ingredients

  • 125 g flour
  • 4 egg (s)
  • 2 dl milk
  • 2 dl water
  • 1 teaspoon salt
  • 1 bunch chives
  • 2 tablespoon parsley, chopped
  • 2 tablespoon butter, for frying
  • Pepper from the grinder
  • 50 g sprouts, choice for arnish

Instructions

  1. Put the flour in a bowl. Separate the eggs and whisk the yolks with the milk, water and salt and pour them into the flour. Mix everything into a smooth dough.
  2. Finely chop the chives and add to the batter together with the parsley. Beat the egg whites until stiff and fold into the batter.
  3. Heat a little butter in a non-stick frying pan and add about 3 tablespoons of batter for each omelette. Spread the dough thinly and bake until golden brown on both sides.
  4. Fold in half to serve and garnish with pepper and sprouts.
