Ingredients
- 2 cloves garlic
- Salt and pepper, freshly ground black
- 4 sprigs thyme
- 1 small Bunch chervil
- 1 teaspoon mustard (Dijon mustard)
- 50 ml vinegar (red wine vinegar)
- 175 ml olive oil

- Put the garlic, a pinch of salt and the herbs in a bowl. Mash together, then stir in the mustard and vinegar until smooth. Pour in the oil slowly, stirring constantly, until an emulsion has formed. Season with the pepper.
