Ingredients
- 2 bunch herbs, mixed fresh (e.g. coriander, parsley, basil and dill)
- 125 ml olive oil, extra virgin
- 4 salmon fillet (s), (200g each)
- 8 slices ham, raw
- Salt and pepper

- Preheat oven to 175 degrees. Roughly chop the herbs and place in a mortar, mix with a little salt and grate. Gradually pour in the olive oil until a thick paste is formed.
- Spread the herb paste evenly over the top of the salmon fillets, then wrap each fillet in 2 slices of ham.
- Bake for about 20-25 minutes. Serve immediately on preheated plates.
