Rassolnik is a very popular soup the main ingredients of which are pickles and brine. I propose you to cook the classic recipe for a rassolnik with pearl barley. Let’s cook this rassolnik in a multicooker.
Ingredients
Beef – 500 g
Pearl barley – 140 g
Potatoes – 150 g
Onions – 100 g
Carrots – 100 g
Celery – 1 stalk
Pickles – 100 g
Brine – 100 g
Tomato paste – 50 g
Vegetable oil – 40 g
Water – 2.3 l
Salt
Bay leaf
Peppercorns
Coriander seeds
How to cook a rassolnik with barley in a multicooker:
Directions
Cut the meat into large dice.
Grate the carrots on a coarse grater or cut them into very small cubes.
Chop the pickles the same way as carrots.
Chop the onions.
Turn on the multicooker in Multicook mode and set the cooking temperature of 130 degrees. Place the vegetables into a bowl, salt, add the tomato paste and oil. Saute both sides for 15 minutes stirring occasionally.
Pour the brine in 5 minutes before the end of the timer. After the beep, take all the vegetables out to a separate bowl.
Cut the potatoes into small dice.
Rinse the pearl barley well under running warm water until clear.
Grate the celery stalk on a fine grater (about 1 teaspoon.).
Put the meat, pearl barley, bay leaf, pepper, coriander, salt (1 teaspoon.) into the multicooker, as well as pour the water in. Set the Soup mode and cook the dish for 1 hour 50 minutes.
Place the potatoes, all the sauteed vegetables, and celery into the multicooker in 30 minutes before the end of the program. Cook the rassolnik with pearl barley until the potatoes are done.
