  • Pearl barley – 140 g
  • Potatoes – 150 g
  • Onions – 100 g
  • Carrots – 100 g
  • Celery – 1 stalk
  • Pickles – 100 g
  • Brine – 100 g
  • Tomato paste – 50 g
  • Vegetable oil – 40 g
  • Water – 2.3 l
  • Salt
  • Bay leaf
  • Peppercorns
  • Coriander seeds

How to cook a rassolnik with barley in a multicooker:

  1. Cut beef into large chunks
  2. Grate carrots on a coarse grater, or cut into small cubes
  3. Chop pickles the same way as carrots
  4. Chop onions
  5. Heat oil in a large pot over medium heat. Add onions, carrots, pickles, tomato paste, and a pinch of salt. Sauté for 15 minutes, stirring occasionally. Add brine in the last 5 minutes. Transfer vegetables to a bowl.
  6. Cut potatoes into small cubes
  7. Rinse pearl barley under warm running water until the water runs clear
  8. Grate celery stalk finely (roughly 1 teaspoon)
  9. Add beef, pearl barley, 2.3 liters water, bay leaf, peppercorns, coriander seeds, and 1 teaspoon salt to the pot. Bring to a boil, then reduce heat to medium-low and simmer for 1 hour 50 minutes
  10. Add potatoes, sautéed vegetables, and grated celery. Continue simmering for 30 minutes until potatoes are tender
  11. Taste and adjust seasoning with salt if needed
