Hungarian Cherry Soup

Sweet cherry soup is made from cherries on red wine, sour cream and cream.

Servings: 6

Ingredients

  • Pitted cherries, canned or frozen – 1 kg
  • Dry red wine – 750 g
  • Low-fat cream – 250 g
  • Sour cream or crème fraiche – 250 g
  • Water – 250 g
  • Sugar – 1 glass
  • Cinnamon – 1-2 sticks
  • Almond extract – 1 teaspoon
  • Serving vanilla pods (optional)
  • Sour cream for serving (optional)

Directions

  1. Put cherries, cinnamon sticks in a large saucepan, add sugar, wine and water. Bring the mixture to a boil, reduce heat, cook the cherries for 20-30 minutes. Remove the pan from the stove, add the almond extract.
  2. In a separate bowl, mix a few tablespoons of cream with sour cream, mix well. Then, gradually, add the remaining cream. Mix well. Add this creamy mixture to the cherry soup. Chill and serve Hungarian Cherry Soup in plated bowls, garnished with vanilla pods (optional). You can also add sour cream over the Hungarian cherry soup before serving.
