Ingredients

  • 1 pumpkin (se) (butternut)
  • 1 shallot (s), or spring onion
  • 400 g mushrooms, fresh
  • olive oil
  • salt
  • pepper
  • nutmeg
  • parsley
  • Lemon zest, grated
  • 200 g oat cream cheese, or other cheese
  • 200 g cooked ham, to taste

Instructions

  1. Peel the pumpkin and cut into 1 cm round slices. Boil these in salted water for 5 minutes.
  2. Sauté shallots or spring onions in a little olive oil in a pan, add fresh mushrooms and season with salt, pepper, parsley and grated lemon zest.
  3. Put the pumpkin slices in a baking dish and season with salt and pepper, possibly a little grated nutmeg. Put the mushroom mixture on the pumpkin slices, spread the goat cream cheese (or Gouda slices) over the top and bake at 180 ° C for 5 minutes.
  4. If the mushroom mass is enriched with cooked ham, it is a main meal.
  5. 1 slice is suitable as a starter, 2-3 slices as a main course.
