Ingredients

  • 3 egg (s)
  • 6 tablespoon sugar
  • 0.5 ½ vanilla pod (s), scraped out pulp
  • 2 tablespoon raisins soaked in rum
  • 250 ml cream, whipped
  • 50 g chocolate (whole milk)
  • 250 g strawberries
  • 1 handful mint
  • 2 tablespoon sugar
  • powdered sugar

Instructions

  1. Beat eggs with sugar over steam (approx. 80 ° C). Then beat cold on ice.
  2. Mix in the vanilla pulp and rum raisins. Fold in the whipped cream. Spread about 2 cm thick on a baking sheet lined with baking paper and place in the freezer for about 6 hours.
  3. Melt the chocolate, brush it onto the parfait with a brush just before it cools down. Just freeze for a moment!
  4. Quarter the strawberries, marinate with mint and sugar.
  5. Break Kaiserschmarrn into small pieces, arrange on chilled plates with strawberry and mint salad, sprinkle with powdered sugar.
  6. Tip: Always spread parfait on baking paper, it would stick to a plate! Always beat cold - then it will be nice and fluffy!
