Ingredients

  • 2 chicken drumsticks
  • 2 chicken breasts
  • salt and pepper
  • 3 tablespoon olive oil
  • 2 cloves garlic, finely chopped
  • 0.5 ½ bunch sage, plucked from the stems
  • 3 bay leaves
  • 250 ml white wine, dry
  • 6 large tomato (s), peeled and diced
  • 150 g olives, black

Instructions

  1. Briefly rinse the chicken pieces with cold water, pat dry and rub vigorously with salt and pepper.
  2. Heat the olive oil in a roasting pan and fry the chicken pieces all around until golden brown.
  3. Put the sage, bay leaf and garlic in the roasting pan and deglaze everything with the wine. Cover and let simmer for 25 minutes.
  4. Add the diced tomatoes and olives and cover and simmer for another 20 minutes.
  5. Season to taste with salt and pepper.
  6. Oven-fresh baguette and salad go well with this.
