Ingredients

  • 1 lemon (yuzu, Japanese lemon), alternatively lime or lemon, organic
  • 80 ml soy sauce, Japanese
  • 80 ml mirin (rice wine, Japanese) sweeter
  • 80 ml sake (rice wine, Japanese)
  • 8 slices salmon fillet (s), 50 g each

Instructions

  1. Rinse yuzu or lime (lemon) well under hot water, then cut into 4 slices.
  2. Mix the soy sauce, mirin and sake together in a bowl. Place the salmon slices in a bowl and pour the marinade over them. Spread the lemon wedges over the salmon. Cover and leave the salmon to marinate in the marinade in the refrigerator for at least 1 hour.
  3. Take the salmon out of the marinade, dab and fry (grill) in a pan or on the grill for approx. 3 minutes, brushing the marinade over and over again.
