Instructions

  1. For the wild garlic pesto, roast the pine nuts in a hot pan without fat until light brown (careful, this goes very quickly), allow to cool and puree with the wild garlic cut into thin strips and the olive oil, stir in freshly grated Parmesan and season with salt and pepper.
  2. Place the lamb salmon in a shallow dish, drizzle with olive oil and cover and set aside for 30 minutes. In the meantime, preheat the oven to 220 ° C.
