Ingredients

  • 30 raspberries, frozen
  • 3 tablespoon vinegar (raspberry vinegar)
  • 6 tablespoon oil (walnut oil)
  • salt
  • Black pepper
  • sugar
  • 3 tablespoon butter
  • 2 tablespoon white wine, dry
  • 1 ½ tablespoon sugar
  • 1 cup walnuts, roughly chopped
  • Parmesan, finely sliced
  • 250 g lamb`s lettuce

Instructions

  1. Spin the very well washed lamb`s lettuce dry, cut into small pieces if necessary and then arrange on a salad plate. Melt the butter, sugar and wine in a pan and caramelize the roughly chopped walnuts in it. Then remove the walnuts and let them cool. Puree the raspberries with the vinegar, oil and the spices using a blender. Drizzle the dressing over the salad and sprinkle with the nuts. Finally, decorate with cheese shavings.
