Ingredients
- 4 tablespoon orange juice, freshly squeezed
- 4 tablespoon oil (hazelnut or argan oil)
- 1 tablespoon honey
- 1 teaspoon mustard (if possible Dijon mustard)
- 1 pinch cinnamon
- 1 pinch cayenne pepper
- 1 pinch (s) salt
- 1 pinch (s) sugar
- 500 g lamb`s lettuce
- 6 mandarin (s)
- 2 tablespoon pumpkin seeds

- Wash and clean the lamb`s lettuce and set aside. Peel the mandarins, cut into segments and also set aside.
- Put the remaining ingredients except the pumpkin seeds in a sealable glass and shake well. Season to taste with salt, honey and cayenne pepper.
- Mix the lamb`s lettuce with the dressing in a large bowl and mix well with your hands. Add the mandarins and fold in. Distribute on four plates and garnish with about 1/2 tablespoon pumpkin seeds each.
- I always use a fruity French Dijon mustard with raisins - this makes the dressing fruity and sweet. The salad also tastes good if you use normal or sweet mustard.
