Ingredients

  • 50 g smoked bellies, finely diced
  • 1 shallot (s), finely diced
  • 1 orange (s), the juice it
  • 1 teaspoon sugar
  • 1 teaspoon mustard, medium hot
  • 0.5 teaspoon ½ pepper, ground
  • 4 tablespoon balsamic vinegar
  • 2 tablespoon parsley, chopped until smooth
  • olive oil
  • 4 handfuls lamb`s lettuce

Instructions

  1. Leave the bacon with 1 tablespoon of olive oil to make crispy cubes
  2. Mix the remaining ingredients to a vinaigrette, but do not add any oil yet!
  3. Before serving, add the bacon cubes to the vinaigrette and
  4. either the fat at the same time (gives a delicious taste, but may be
  5. a bit greasy when it gets cold) or instead of the bacon, complete the vinaigrette with approx. 3 tablespoons of olive oil.
  6. Arrange the salad on plates and drizzle with the vinaigrette.
  7. Variation 1: Put a few more orange fillets on the lamb`s lettuce.
  8. Variation 2: Put the still roasted pine nuts on the lamb`s lettuce or both.
  9. Incidentally, it also tastes very good with rocket!
