  • Thin lavash – 170 g
  • Tomatoes – 250-270 g
  • Boiled sausage – 100 g
  • Hard cheese – 90 g
  • Eggs – 3 pcs.
  • Salt to taste
  • Vegetable oil (for frying) – 3 tbsp (45 ml)
  • Fresh greens (optional, for serving) – to taste

  1. Prepare foods from the list. From the indicated amount, I got 3 envelopes from pita bread with a filling.

  2. Cut out 3 circles from the pita bread with a dia approximately equal to the bottom of the pan, in which the pita envelopes will be prepared (1-2 cm more can be done).

  3. Break the eggs into a bowl.
  4. Add salt and whisk until smooth.
  5. Rub the cheese on a fine or medium grater.
  6. Cut the sausage into very small cubes.
  7. My tomatoes, dry and cut into slices.
  8. Wet one side of the pita bread abundantly with water.
  9. Heat 1 tablespoon in a frying pan. a spoonful of vegetable oil and place the pita bread with the moistened side on the bottom of the pan.
  10. Pour about 1/3 of the egg mixture onto the pita bread and distribute it evenly over the surface.
  11. Then spread evenly about 1/3 of the sausage.
  12. Put 1/3 of the grated cheese on top.
  13. As soon as the bottom of the pita bread turns brown, gently turn it over to the other side.
  14. We spread a few slices of tomatoes on top of the pita bread.
  15. With a spatula, wrap the pita bread in the form of an envelope so that the tomatoes are inside.
  16. Gently turn the resulting envelope over with the seam down and fry for about 2-3 minutes, until golden brown.
  17. Turn over again and fry for about 2 minutes more.
  18. Prepare the rest of the envelopes in the same way.
