  • 100 g butter, cold
  • 1 egg (s)
  • 1 pinch (s) salt
  • 800 g leeks
  • 200 g smoked salmon, sliced
  • 200 g crème fraîche
  • 2 egg (s)
  • salt
  • pepper
  • Cayenne pepper

Instructions

  1. Put the flour, the butter in small pieces, the egg and a pinch of salt in a bowl and knead into a smooth dough. Cover and chill for 30 minutes.
  2. Clean the leek and cut into thin rings and blanch in boiling salted water for 1 minute. Drain very well.
  3. Cut the salmon into thin pieces and place in a bowl with the leek.
  4. Mix the crème fraîche with the eggs, season with salt, pepper and a pinch of cayenne pepper and mix with the leek.
  5. Grease a 26 mold.
  6. Roll out the dough on a floured work surface a little larger than the shape and place in it, making an approx. 3 cm high edge.
  7. Spread the leek mixture evenly in the pan and bake at 180 ° C for 30 minutes.
