Lemon Muffins with Poppy Seeds

Lemon poppy seed muffins are another incredibly delicious pastry that is very easy to prepare even at home. You just can’t help but like such delicious muffins! πŸ™‚

Ingredients

  • Sugar – 2/3 Cup
  • Flour – 2 Glasses
  • Lemon – 1 Piece
  • Baking powder – 2 Teaspoons
  • Salt – 1/2 Teaspoon
  • Soda – 1/4 Teaspoon
  • Egg – 2 Pieces
  • Fatty cottage cheese – 1 Glass
  • Poppy – 4 Art. spoons
  • Butter – 110 Grams

Directions

  1. We rub the zest of one lemon on the finest grater.
  2. In a bowl, lightly grind the sugar and zest.
  3. Sift flour, baking powder, soda, salt and poppy into the same bowl. We mix.
  4. Beat 3/4 cup cottage cheese in a separate container, about 2 tablespoon. lemon juice and eggs.
  5. Add melted butter there, beat gently until smooth.
  6. Mix dry and liquid mixture carefully. Don’t knead too long – just mix evenly.
  7. Grease the muffin molds with butter and fill 3/4 with the resulting dough. Put small balls of the remaining cottage cheese on top of the dough.
  8. We bake for 20-25 minutes at 200 degrees.
  9. Cool the finished muffins first in tins, then on the wire rack.
  10. We serve.
