Ingredients
For the dough:
- 1 cup whipped cream, 200 g
- 1 cup sugar
- 1 packet vanilla sugar
- 1 pinch (s) salt
- 3 egg (s)
- 1 ½ cup flour
- 0.5 ½ pack baking powder
For covering:
- 125 g butter
- 0.5 ½ cup sugar
- 6 tablespoon milk
- 200 g flaked almonds
- 1 cup plum jam e.g., from Zentis

- First of all: The cream cup is used for measuring.
- Pour the cream into a mixing bowl. Wash and dry the mug.
- Whip the cream until stiff. Beat in the sugar, vanilla sugar, salt and eggs. Mix the flour and baking powder, sieve and stir in briefly. Spread the dough on a parchment-lined baking sheet.
- Pre-bake in a preheated oven at 175 ° C top / bottom heat or 150 ° C convection for approx. 15 minutes.
- Take the tray out of the oven.
- Melt the butter in a saucepan for the topping. Stir in sugar and milk and mix well. Fold in the almond flakes.
- Spread the plum jam with a tablespoon in shallow heaps on the pre-baked dough. Spread the almond glaze evenly on the cake. Bake the cake for another 20 minutes at the same temperature until golden brown, remove and let cool down.
- It goes well with lightly whipped cream with a little cinnamon.
