Ingredients
- 80 ml oil, neutral in taste
- 1 egg (s)
- 1 tablespoon white vinegar
- 0.5 teaspoon ½ sugar (rather less)
- 1 teaspoon mustard, medium hot
- salt and pepper

- Put all ingredients together in a tall, narrow mixing beaker and mix with a hand blender. The mayonnaise for potato or pasta salads is ready.
- Tip: Also perfect as an aioli with a crushed clove of garlic.
