Ingredients

  • 400 g cream
  • 1 lime (s), juice and grated zest
  • 2 egg yolks
  • Salt and pepper, from the mill
  • some herbs, for decorating

Instructions

  1. Boil the cream with lime juice and zest for 5 minutes. Remove from the heat and whisk the egg yolks in the sauce. Season with salt and pepper, pour into a bowl, decorate with herbs and serve immediately with fish or seafood.
