Ingredients

  • 18 walnuts, unripe or green (harvested in June)
  • ml 1,400 vodka, or clear schnapps with 40% alcohol
  • 1 stick cinnamon
  • 1 vanilla pod (s)
  • 5 juniper berries, lightly bruised
  • 4 grains allspice
  • 500 ml white wine, dry
  • 450 g suar

Instructions

  1. In a large glass, mix the grated and quartered green nuts with the alcohol, cinnamon, vanilla pod, juniper berries and allspice. Seal the jar and let it steep for 8 weeks in a dark, cool place. Filter.
  2. Then briefly bring the white wine to the boil with the sugar until the sugar has completely dissolved. Let cool down. Mix the cooled wine-sugar syrup with the filtered nut extract, fill into bottles and leave to rest for at least 4 months.
  3. A wonderfully spicy aperitif!
