Ingredients

  • 1 octopus
  • 1 carrot (s), roughly chopped
  • 1 stick celery
  • 1 small onion (s), peeled and halved
  • 1 bay leaf
  • 3 large potato (s)
  • 2 tablespoon olives, black
  • 1 tomato (s), cut into large cubes
  • olive oil
  • parsley
  • 1 clove garlic
  • salt and pepper

Instructions

  1. Bring a large pot of water with the carrot, celery, onion and bay leaf to a boil.
  2. Add the octopus (polipo) and cook on a low flame for about 40 minutes. After 15 minutes, add the washed potatoes (with the skin) to the octopus in the pot.
  3. At the end of the cooking time, cut the octopus into small pieces. Peel the potatoes and cut into large cubes.
  4. Mix everything in a bowl with olives, tomato pieces, olive oil, parsley, chopped garlic, salt and pepper and serve lukewarm.
