Ingredients
- 3 onion (s)
- 3 stalks celery
- 3 clove (s) garlic
- 1 hot pepper, red, hot
- 1 tablespoon olive oil
- 150 g sausae (chorizo), thinly sliced
- 1 tablespoon vinegar, white balsamic vinegar or to taste
- 250 g tortellini, filled with cheese
- 1 tablespoon honey
- 2 beefsteak tomato (s)
- 1 packet mozzarella
- 1 handful basil
- salt and pepper

- Cut the onions into wedges, the celery into fine crescents, and the garlic cloves into oblong sticks. Fry everything in a little olive oil and let it take color and season with salt. Add a few narrow ringlets of a hot, fresh red pepper, as much as you like, and fry the chorizo with it.
- Deglaze with the vinegar, possibly add olive oil and season with approx. One tablespoon of honey. It should taste spicy - sour.
- At the same time, cook the cheese tortellini until just under cooked, strain and transfer to a large bowl. Pour the vegetable mixture on top, mix well and mix in the freshly chopped tomatoes, as well as basil leaves and chopped mozzarella.
- Mix well, let it steep and season with salt and pepper before serving.
