Ingredients

  • 1 medium mango (s)
  • 1 bell pepper (s)
  • 3 carrot (s)
  • 1 large clove garlic
  • 1 cm ginger, chopped
  • 2 tablespoon soy sauce
  • 3 tablespoon vegetable oil, neutral
  • 1 handful peanuts, unsalted
  • 1 pinch (s) salt to taste
  • 1 small sweet potato (s)
  • 200 g smoked tofu

Instructions

  1. Peel the sweet potato and cut into 2 - 3 cm pieces (the smaller, the faster they will cook). Peel the ginger and chop it into small pieces (really only 2 - 3 mm). Peel the garlic and cut into pieces. Wash the peppers and carrots (peel them if necessary) and cut into pieces. Peel the mango and cut into 3 - 4 cm pieces or strips. Cut the smoked tofu into cubes.
  2. Heat 3 tablespoons of oil in the pan over medium heat, sauté the ginger and garlic, if you can smell it, stir. Add the carrots and sweet potatoes, let sizzle for a few minutes, possibly deglaze with about 50 ml water so that nothing burns. Add the mango, smoked tofu, paprika and soy sauce. Fry for about 10-15 minutes until the sweet potatoes are cooked through. Then add salt.
  3. Sufficient for 2 people without side dishes. Sufficient for 4 people if you cook rice with it.
