Ingredients
- 175 g smoked tofu
- 6 gherkins, diced
- 1 small onion (s), cut into thin rings
- 10 cocktail tomatoes, halved
- 1 clove garlic, pressed through a press
- 2 tablespoon vinegar
- 2 tablespoon olive oil
- a bit salt
- 0.5 ½ bunch parsley, finely chopped

- Dry the tofu with a kitchen towel and cut it first into thin slices, then into fine strips. Put the strips in a bowl with the other ingredients. Mix everything well and season to taste.
- The salad tastes best when it has been left to steep in the refrigerator for about an hour.
- Tip:
- Fine strips of paprika fit just as well as the variant with a hard-boiled egg.
