Ingredients

  • 1 ½ kg pork neck, whole, boneless
  • 1 cup olive oil
  • 3 clove (s) garlic, pressed through
  • 1 onion (s), cut into rings
  • 1 tablespoon sea salt, coarse
  • 2 teaspoons thyme
  • 2 tablespoon spice mixture (grill spice)
  • 1 teaspoon rosemary
  • 1 tablespoon paprika powder, noble sweet
  • 0.5 tube ½ tomato paste, 3-fold concentrated
  • 10 dashes Worcester sauce
  • 2 dashes Tabasco
  • 2 dashes lemon juice
  • 0.25 liter ¼ water
  • Pepper, ground, quantity as desired

Instructions

  1. First wash the meat, pat dry and cut into approx. 2 cm thick slices.
  2. Mix all ingredients to a marinade and let the steaks steep in the refrigerator for at least 24, preferably 48 hours.
  3. Grill for about 7 minutes on each side.
  4. This goes well with salad, rice and beans.
