Ingredients

  • 300 g marzipan
  • 2 egg (s)
  • 6 egg yolks
  • 10 tablespoon amaretto or other almond liqueur
  • 3 drops bitter almond flavor
  • 500 g cream
  • 10 sheets gelatin
  • 2 sticks cinnamon
  • 4 clove (s)
  • 2 vanilla pod (s)
  • 8 orange (s)
  • 2 tablespoon sugar
  • 500 ml white wine

Instructions

  1. Bring the white wine with cinnamon sticks, cloves and vanilla pods to the boil and add the sugar to taste. Peel the oranges with a knife so that no white skin can be seen. Then fillet, mix with the white wine marinade and put everything in the fridge.
  2. For the marzipan mousse, soak the gelatine in cold water. Roughly chop the marzipan, add the eggs, egg yolks, bitter almond oil and almond liqueur to a beating kettle and whip in a hot water bath with a whisk or hand mixer until creamy and thick. Dissolve the gelatine in it and refrigerate the mixture until it starts to gel. Then fold in the whipped cream and let the mousse set.
  3. Serve the mousse with the spiced oranges.
