Ingredients

  • 800 g potato (s), floury, peeled and cooked in salted water
  • 3 spring onions, finely chopped
  • 2 bunches parsley, smooth, finely chopped
  • 100 ml olive oil
  • 1 lemon (s), grated zest
  • 2 tablespoon lemon juice
  • salt
  • pepper
  • 50 ml olive oil

Instructions

  1. Let the cooked potatoes steam and pour 100 ml of heated olive oil over them. Mash with a potato masher. Fold in lemon zest and juice as well as spring onions and parsley. Salt, pepper and drizzle with 50 ml of olive oil.
