McMoe`s Wax Bean Salad

Ingredients

  • 1 gr. Jar wax beans
  • 5 tablespoon herb vinegar
  • 4 tablespoon sunflower oil or rapeseed oil
  • 2 teaspoons salt
  • some black pepper from the mill
  • 4 teaspoons sugar
  • 1 onion (s)
  • some parsley, chopped

Instructions

  1. Drain the wax beans, collecting the bean stock (should be about ¼ liter). Peel and finely dice the onion.
  2. Bring the bean stock to the boil with vinegar, oil, salt, sugar and diced onions.
  3. Put the wax beans in a bowl, grind plenty of pepper over them and pour the bean stock dressing over them. Sprinkle with the parsley.
  4. Let the salad steep for at least 1 hour. It also tastes lukewarm very good and goes very well with hamburger bread (see my recipes).
