Ingredients

  • 300 g Fillet of white fish
  • 4 Medium sized tomatoes
  • 2-4 slices Bacon
  • 1 Red onion
  • 6-10 Green olives
  • 4 twigs Thyme
  • 3 tbsp Olive oil
  • 1 tbsp Tomato paste
  • 2 tbsp Fresh chopped basil
  • Spices "Italian herbs" to taste

Instructions

  1. Cut the tomatoes and onions into quarters and place in a baking dish, season and drizzle with 2 tablespoons of olive oil. Bake at 190 degrees for 10-15 minutes.
  2. Season the fish and wrap with bacon slices.
  3. Add tomato paste, sliced ​​olives to the tomatoes and mix well.
  4. Place the fish and pour over the remaining oil. Bake for another 20 minutes.
  5. Sprinkle with chopped basil leaves before serving.
