Ingredients

  • 1 onion (s), chopped
  • 2 clove (s) garlic, pressed
  • 1 zucchini, diced
  • 1 red pepper (s), diced
  • 1 pepper (s), yellow, diced
  • 3 tomato (s) (plum tomatoes), diced
  • 1 tablespoon tomato paste
  • 4 fish fillet (s) (saithe, redfish or cod)
  • 1 shot red wine
  • 1 cup sour cream
  • 150 ml broth
  • salt and pepper
  • olive oil
  • Lemon juice
  • 1 cup sour cream or sour cream
  • thyme

Instructions

  1. Heat the olive oil in a large pan or roasting pan. Fry the onion in it until translucent. Add the garlic, zucchini and paprika and sauté. Add the tomatoes and then pour in the broth and red wine. Thicken with tomato paste. Season to taste with salt, pepper and thyme.
  2. Pepper and salt the fish fillets and drizzle with lemon juice. Then place on the vegetables and brush with the sour cream. Cover and cook the fish pan over a medium heat for about 10 minutes - the cooking time depends on the size of the fillets. Serve immediately.
