Ingredients

  • 1 eggplant (s), sliced
  • 2 bell peppers, red and green, divided into eighths
  • 1 can (s) tomato (s), peeled
  • 2 tablespoon parsley, finely chopped
  • 1 sausage (Greek, Krainer, Burenwurst), cut into not too thin slices
  • salt and pepper
  • olive oil

Instructions

  1. Salt the aubergine slices and let stand for 1 hour, wash with plenty of water and squeeze out. Briefly grill the peppers and aubergine.
  2. Heat olive oil in a pan, add peeled tomatoes and pieces of sausage, add eggplant, paprika and parsley, season with salt and pepper. Let simmer for about 20 minutes.
