Ingredients

  • g 1,000 beef, finely diced
  • 400 g tomato (can), chopped up with juice
  • 2 medium onion (s), chopped
  • 1 can black beans with chili sauce (400g, with the juice)
  • 1 packet spice mix (taco, 35 g)
  • 340 g corn (Mexico mix, can), drained
  • 1 small pepper, green or red, cut into small slices (optional)
  • 1 cup sour cream
  • 100 g cheese, rated (spicy)

Instructions

  1. Add the beef, canned tomatoes with juice, and chopped onions to a 3.5 L crockpot. Mix well. Cover and simmer on low heat for 9-11 hours until the meat is tender.
  2. Add the black beans with chili sauce, taco spice mix, and drained corn to the crockpot. Stir well. Simmer on high heat for 15-30 minutes.
  3. Serve the stew in bowls. Top each with sour cream and grated cheese. If using the optional pepper, garnish with sliced pepper.
