Instructions

  1. Cut pork into roughly 3 cm pieces.
  2. Heat oil in a large pan over medium-high heat. Fry pork until browned on all sides, about 8-10 minutes. Season with salt and pepper.
  3. Add chopped onions and cook for 3-5 minutes until softened.
  4. Pour in broth, tomato paste, and tomato puree. Bring to a boil over medium-high heat.
  5. Add paprika powder and chili powder to taste.
  6. Add kidney beans and corn. Reduce heat to medium and simmer for 20 minutes, until pork reaches 63°C (145°F) internally.
  7. Stir in sour cream and heat through over medium-low heat without boiling.
  8. Serve with rice or potatoes.
