Mexican Yellow Rice

A spicy Mexican dish based on rice, beans, and corn

Ingredients

  • rice 100 g
  • corn 80 g
  • bell pepper 1 pc
  • onion 1 pc
  • beans 0.25 cups
  • garlic 2 cloves
  • tomato paste 20 g
  • chili pepper 0.25 teaspoon
  • vegetable oil 1 tablespoon
  • salt to taste

Directions

  1. I soak the beans overnight and boil until cooked.
    I drain the water and let it drain
  2. Finely chop the onions
  3. Peel the garlic and cut into thin slices
  4. I extract the seeds from the pepper and cut them into small pieces
  5. Fry onions, garlic, and peppers in vegetable oil
  6. I add rice, spices, and salt.
    Fry for 3-4 minutes
  7. I spread the tomato paste and pour in the water
  8. Cover and carcass for 25 minutes
  9. I spread the beans and corn.
    Carcass until fully cooked
