Ingredients

  • 4 pork schnitzel, thin
  • salt
  • pepper
  • Paprika powder, noble sweet
  • 2 tablespoon flour
  • 1 large egg (s)
  • 4 tablespoon breadcrumbs
  • 3 tablespoon parmesan, grated
  • Fat, for frying

Instructions

  1. Place each schnitzel between two sheets of plastic wrap and beat lightly with a meat mallet
  2. Season the schnitzel with salt, pepper, and paprika powder on both sides
  3. Set up three shallow dishes: one with flour, one with beaten egg, one with breadcrumbs mixed with grated parmesan
  4. Coat each schnitzel in flour, shaking off excess
  5. Dip each schnitzel in the beaten egg, letting excess drip back into the bowl
  6. Coat each schnitzel thoroughly in the breadcrumb and cheese mixture
  7. Heat the fat in a large pan over medium-high heat until shimmering (about 2 min)
  8. Fry the schnitzel 3-4 min per side until golden brown and the internal temperature reaches 63°C (145°F)
