Ingredients

  • 750 ml vinegar, (honey vinegar)
  • 3 peach (s)
  • 3 tablespoon honey
  • 3 teaspoons mustard seeds, yellow
  • 1 sprig mint

Instructions

  1. Peel and core the 3 peaches.
  2. Place the peaches in a glass jar with 1 sprig mint and 3 teaspoons mustard seeds.
  3. Warm 3 tablespoons honey over medium heat until liquid (2-3 minutes), then pour over the peaches.
  4. Add 750 ml vinegar to the jar.
  5. Leave the jar in a sunny place for 14 days.
  6. Strain the vinegar into a pot, setting aside the peaches and solids from the jar.
  7. Heat the vinegar over medium-high heat until it reaches a boil (100°C / 212°F).
  8. Pour the hot vinegar back into the jar with the peaches and solids.
  9. Leave the jar in a sunny place for 7 days.
  10. Strain the vinegar and pour into bottles.
