Ingredients

  • 600 g minced pork
  • 3 bell peppers, green, red, yellow
  • 1 onion (s)
  • 500 g cucumber (s)
  • 1 tablespoon clarified butter
  • 200 ml vegetable stock
  • salt and pepper
  • 1 tablespoon rosemary
  • Paprika powder, noble sweet

Instructions

  1. Heat clarified butter in a large pan over medium-high heat. Add minced pork and stir continuously until crumbly and cooked through, about 5-7 minutes (internal temperature 63°C / 145°F). Season with salt, pepper, and paprika.
  2. Finely chop the onion, add to the pan, and stir for 1-2 minutes.
  3. Wash and halve the bell peppers, cut into strips, and add to the pan.
  4. Peel the cucumber, cut in half, and scrape out the seeds with a teaspoon. Cut into 0.5 cm thick slices and add to the pan.
  5. Stir for 2-3 minutes. Pour in the vegetable stock and add the rosemary. Simmer over medium heat for about 8 minutes.
  6. Serve with rice.
