Ingredients

  • 1 glass mirabelle plums (about 800ml)
  • 500 g natural yourt
  • 200 g cream cheese
  • 1 lemon (juice and zest)
  • 1 packet vanilla sugar
  • sugar
  • 12 sheets gelatin
  • 2 tablespoon sugar
  • 200 ml whipped cream

For decoration:

  • Grated chocolate
  • Lemon balm or mint leaves

Instructions

  1. Pit the mirabelle plums (if necessary) and puree them with any juice.
  2. In a large bowl, combine the plum puree, yogurt, cream cheese, lemon juice, lemon zest, and vanilla sugar.
  3. Season to taste with sugar.
  4. Soak the 12 gelatin sheets in cold water for 5 minutes until softened.
  5. Squeeze excess water from the gelatin sheets and place in a small bowl.
  6. Pour about 50 ml hot water (70°C / 160°F) over the gelatin and stir until completely dissolved.
  7. Stir 3 tablespoons of the plum cream mixture into the dissolved gelatin.
  8. Pour the gelatin mixture into the remaining plum cream and stir until fully combined.
  9. Refrigerate for about 1 hour, stirring occasionally, until the mixture is slightly thickened but still pourable.
  10. In a separate bowl, whip the 200 ml cream with 2 tablespoons sugar for about 2-3 minutes until stiff peaks form.
  11. Fold the whipped cream gently into the partially set plum mixture.
  12. Divide among 8 portion glasses.
  13. Refrigerate for at least 2 hours until completely set.
