Mushrooms with Lentils

A very simple, tasty and satisfying lean dish made from vegetables, mushrooms and lentils.

Servings: 2

Ingredients

  • Mushrooms (frozen or fresh) – 300 g
  • Red lentils – 100 g
  • Carrots – 1 pc.
  • Petiolate celery – 1 stalk
  • Leeks – 1/3 stalk
  • Vegetable broth
  • Salt
  • Olive oil

Directions

  1. In olive oil, fry carrots and celery, cut into small cubes, and leek, cut into thin rings. (Leeks can be substituted for common onions.)
  2. Add mushrooms. (I have frozen mushrooms. But it can be fresh champignons and other mushrooms to taste.) Fry, stew a little
  3. Add lentils. Salt to taste. Pour in vegetable stock and cook for about 20 minutes.
